Cherry wood has long been desired by furniture and cabinet makers due to its even color distribution when stained and glass like smoothness when finished.
Sap cherry will offer more grain variation, and may contain some minor mineral deposits. Rustic cherry will contain mineral deposits, knot holes, and other natural wood characteristics that will be retained by the craftsman if you select Rustic Cherry as your wood option. Those knot holes and other imperfections then get filled with a black epoxy to add to the rustic finish. This will prevent food, or other kitchen debris from getting caught in those imperfections
